Many of your questions may be answered if you read the manual first.

How many normal tracks are in the game?
20 to be exact. 4 in each of the 5 cups.

How many bonus tracks are there in the game?
20 again. Also 4 in each of the 5 cups. Making a total of 40 tracks!

How many multiplayer battle arenas are there?
4.

How many racers are in the game?
There are 8. Mario, Luigi, Peach, Toad, Yoshi, Donkey Kong, Wario and Bowser.

How many difficulty levels are in the game?
3. In order from easiest to hardest: 50cc, 100cc and 150cc.

What are the names of all of the cups in the game?
In order: Mushroom Cup, Flower Cup, Lightning Cup, Star Cup and Special Cup.

How do you get the "sunset" sky in the title screen?
Get gold trophies on all of the 5 normal cups on 50, 100 and 150cc.

How do you get the "night time" sky in the title screen?
Get the triple star ranking on ALL the normal track cups.

How do you unlock the bonus SNES Super Mario Kart Tracks?
To unlock the SNES tracks, you must complete the cups with 100 coins or more. For each cup, the corresponding SNES cup will become available.

How do you unlock the bonus SNES Tracks in Time Trial?
To unlock the SNES tracks for time, you must complete the 150cc cups with 100 coins or more.

Do you get anything for getting gold trophies on all tracks (normal and bonus)?
Nope.

Is there a "Mirror Track" mode like in Mario Kart 64?
There are rumors that if you get the triple star rank on every track (that includes both normal and extra tracks) you will unlock the mirror tracks mode. This has been proven false and there is no way of getting mirrored tracks.
